Professor Louise Wilkinson’s Bolingbroke Ladies Cake
Introduction
Ingredients
8 oz butter softened
4 oz icing sugar
8 oz plain flour
4 oz cornflour
Icing sugar decorate
Castor sugar to dredge
Method
1. Beat the butter and sugar together until creamy
2. Sieve together the plain flour and cornflour
3. Blend in until thoroughly mixed
4. Gently roll out the mixture and cut into shape using
5. Line a baking tin with baking parchment
6. Place the ladies on, well spaced
7. Bake at 150° C for 20 to 30 minutes until pale golden in colour
8. Allow to cool
9. Sieve icing sugar and mix with hot water to a medium consistency and decorate appropriately
10. Alternatively be part of the feminist Bolingbroke Rebellion! Simply cut shortbread into rounds, bake, dredge with castor sugar and eat
Either way Prof lessor Wilkinson's shortbread is delicious
