Introduction

Anglo-Saxon metrical charm

Ingredients

(All measures in imperial Anglo-Saxon....)

Cake
6oz honey
5oz butter
3oz soft brown sugar
1tablespoon water
2 large eggs
7oz Self-raising flour
Topping
2oz icing sugar
1tablespoon honey
2 teaspoons water

Method

  1. 1 .Put honey, butter, sugar and water into a pan.
    2. Heat gently until melted - remove from heat.
    3. Cool slightly.
    4. Add beaten eggs and flour and mix thoroughly.
    5. Spoon into a lined 2lb loaf tin or 7inch cake tin
    6. Cook at 180° gas mark 4 for 45 mins
    7. Test with a wooden skewer.
    8. Cool slightly before turning out onto rack

  2. For topping:
    1. Mix together icing sugar, honey and water to form a smooth paste.
    2. Trickle over cake.
    3. Freezes well
